Where it grows

Pampore — the Saffron Town

South-east of Srinagar along the Jhelum, Pampore’s high karewa plateaus and cold, dry autumns give Kashmiri kesar its deep colour and strong aroma.

Anatomy of a thread

What makes it real

Real threads are deep crimson with a flared, trumpet-shaped tip and a thin yellow base. Three natural compounds do the magic:

Crocin — the colour
Picrocrocin — the taste
Safranal — the aroma

The water test

Real kesar vs fake kesar

Fake kesar is everywhere. Drop one thread in a glass of warm water — it tells you the truth in 60 seconds.

✓Real: slow golden-yellow trail, the thread stays red.
✗Fake: red dye bleeds in seconds, the thread turns pale.
